The new Helsinki Menu was inspired by flavours from Åland

As of next week, you can enjoy the new, delicious Helsinki Menu at Helsinki Airport. Designed by top chef Matti Jämsen, the menu is based on the best Finnish ingredients.

The new menu was inspired by flavours from the Åland Islands.

For starters, there is Finnish cold-smoked whitefish and rainbow trout with cucumber and horseradish mousse.

The main course consists of organic Åland lamb, seasoned with juniper and served with roasted onion and wild garlic.

All this is topped off with a portion of baked apples, salted caramel and lingonberry ice cream.

The Helsinki Menu, part of the “Makujen Suomi” concept, inspires restaurants to create menus that are characteristic of their restaurant’s particular cities or provinces, and to pay particular attention to seasonal goods delivered with a unique local flavour.

The new Helsinki Menu will be available at the Fly Inn Restaurant & Deli as of 20 October.

Jämsen has represented Finland twice at the world chef championships in Bocuse d’Or and was selected as the fourth-best chef in the world this year.

This year, he was also selected as the “Kokkien Kokki” (“the Chef of Chefs”). The selection was made by leading Finnish chefs.
